Resumo:

A economia brasileira passou por um período de forte desenvolvimento; com o boom da classe média; entrada da mulher no mercado de trabalho; concessão de crédito; etc.; o que causou uma alteração estrutural no perfil de consumo dos brasileiros. Essa alteração impulsionou o crescimento de diversos setores da economia; entre eles o de alimentos – uma vantagem competitiva natural do país – em especial; o de alimentação fora do lar; que cresceu 13% mesmo em um ano de crise como está sendo 2015. Com isso; surge a oportunidade de empreender em setores atrelados ao suporte do mercado de alimentação; como é o setor de logística refrigerada. A logística frigorificada envolve manusear e lidar com produtos sensíveis à temperatura atuando em diversos elos da cadeia de valor; desde a indústria até a chegada do alimento ao consumidor final; e pode ser muito rentável se possuir uma dinâmica eficiente de operação. Para discutir sobre como melhorar esse tipo de operação do ponto de vista de eficiência; utilizou-se a Análise Envoltória de Dados (DEA); aplicando essa metodologia para a operação de armazenagem frigorificada de uma empresa do setor; analisando seus cinco armazéns de forma comparativa; por indicadores físicos; operacionais e financeiros. Aplicando o modelo; obteve-se que o quarto armazém analisado foi o mais bem conceituado do ponto de vista de eficiência (apresentando um desempenho econômico comparável aos outros armazéns; mesmo possuindo uma área muito menor) e; por isso; deve ser tomado como referência e benchmark para os outros armazéns reduzirem seu consumo de insumos e aumentarem seu nível de produção. Sugere-se como próximos passos; a extensão do trabalho para análise de operações de transporte e avaliação da operação a partir da consideração de retornos variáveis de escala a fim de aprofundar o tema.

Abstract:

The Brazilian economy went through a strong period of development; with the boom of the middle class; women's entry into the labor market; lending; etc.; which caused a structural change in consumption profile of Brazilians. This change boosted the growth of various industries; including the food market – a natural competitive advantage of the country – especially the food outside the home market; which grew 13% even in a year of crisis as being 2015. Thus; the opportunity to take into sectors linked to the support the feed market; such as chilled logistics industry arises. The refrigerated logistics involves handling temperature sensitive products; working in various links of the value chain; from the industry until the arrival of food to the final consumer; and can be very profitable if it has an efficient dynamic of operation. In order to discuss how to improve this type of operation from the standpoint of efficiency; it has been used the Data Envelopment Analysis (DEA); applying this methodology for the chilled storage operation of a company in the industry; analyzing its five warehouses comparatively by physical; operational and financial indicators. Applying the model; it obtained that the fourth warehouse analyzed was the most well-regarded from the standpoint of efficiency (showing a comparable economic performance to other warehouses; even with a much smaller area) and therefore should be taken as a reference and benchmark for other warehouses to reduce their consumption of inputs and increase their level of production. It is suggested as next steps; the extent of this work to analyze transport operations and to evaluate the operation from the consideration of variable returns to scale for further assessment.
